Mandalay Bay's Citizens Kitchen Workers Vote Overwhelmingly to Join Culinary Union

The unionized workers include cooks, servers, bartenders, dishwashers, and hosts at the SBE Entertainment Group-owned establishment. Cook Raymundo Lopez cited the need for family health insurance as a key factor in his decision to support unionization.
This development follows a broader trend of Las Vegas Strip restaurant workers organizing in 2024, including employees at:
- Eataly at Park MGM
- Brooklyn Bowl
- Gordon Ramsey Fish & Chips at the Linq Promenade
- Café Belle at Paris Casino
- Starbucks at the Flamingo Casino
In related news, the Culinary Union reached a tentative agreement with Fontainebleau Las Vegas after 18 hours of negotiation. This agreement will cover approximately 3,300 workers and awaits rank-and-file approval.
Meanwhile, a strike continues at Virgin Hotels Las Vegas since November 15, with workers seeking improved wages and working conditions. The casino claims the Culinary Union is not bargaining in good faith and has not brought their latest offer to members for a formal vote.
Ted Pappageorge, secretary-treasurer of the Culinary Union, emphasized their commitment to organizing hospitality workers across the Las Vegas Strip, focusing on fair wages, job security, and union benefits.
